THE HEART BEHIND THE HEAT

Meet Sabin.
Come hungry.

Chef Sabin Sanchez is the chef behind Chef Tastebudz at Taco City in Downtown Dallas. Alongside his mom, he brings a family touch to the food and the experience at the window.

His approach? Take birria beyond the taco. From a cheesy burrito to a bowl of ramen, the kitchen is always finding another way to bring you that rich, slow-braised flavor.

The Dallas Observer traced the business back to pop-up taco events in 2020 and documented its move to Taco City in 2024. Today, you’ll find the walk-up spot at 600 Jackson Street, with plenty of creativity on the grill.
